It’s cookout season! Join us for a demonstration and discussion of cross-cultural barbecue. Hattem Mattar, a Texas-trained pitmaster and proprietor of Mattar Farm in Dubai, United Arab Emirates, talks with 2018 Folklife Festival alum Berj Ghazarian of Bark BBQ, based in Baltimore, Maryland, about third-culture cuisine, the passion for Central Texas brisket, and how the chefs are building community around the table.

The conversation is moderated by award-winning culinary historian Adrian Miller.

This event is part of the Folklife Festival program United Arab Emirates: Living Landscape | Living Memory, which is supported by the UAE Embassy in Washington, DC, the UAE Ministry of Foreign Affairs, and the UAE Ministry of Culture and Knowledge Development.
