Hattem Mattar, a Texas-trained pitmaster and proprietor of Mattar Farm in Dubai, United Arab Emirates, talks with 2018 Folklife Festival alum Berj Ghazarian of Bark BBQ, based in Baltimore, Maryland, about third-culture cuisine, the passion for Central Texas brisket, and how the chefs are building community around the table.
